1. Preheat the oven

  1. Preheat the oven to 200°C.
  2. Butter and flour the individual molds or ramekins.

2. Melt the chocolate

  1. Melt the chocolate and butter together in a double boiler or in the microwave (in 30-second intervals), then mix until smooth and glossy.

  1. In a bowl, whisk the eggs and sugar until the mixture whitens slightly.
  2. Add the flour and salt, mix.
  3. Then stir in the still-warm melted chocolate.
  4. Gently mix with a spatula until a smooth paste is obtained.

4. Pour and cook

  1. Divide the batter among the ramekins, filling them ¾ full.
  2. Bake for 10 to 12 minutes: the center should remain runny, the crust just formed.
  3. Remove from the oven, let rest for 2 to 3 minutes before carefully unmolding.
