Denis Kairet continues a family tradition with passion and creativity. Surrounded by his wife and two children, he chose to develop a different kind of ice cream: one that draws its uniqueness directly from the farm's quality milk.

Trained at the Ciney agricultural school, he quickly saw the obvious opportunity to transform milk into ice cream, a product that did not yet exist in his environment. A pioneer in this field, he first took over the ice cream vendor's tour before building his own clientele, seduced by creations that have become emblematic: the timeless vanilla and especially the speculoos, offered 28 years ago and which remains the house's flagship specialty.

Today, this artisan is not only a renowned producer, but also a transmitter: he, in turn, trains future ice cream makers at IFAPME. A fine example of how passion, innovation, and tailored support can pave the way for new generations of gourmet creators.

Behind this success is also a relationship of trust with Bruyerre. From the very beginning, he was able to count on the advice and support of our team. His workshop was gradually equipped with professional benchmark equipment: Carpigiani machines, true "Rolls Royce" of ice cream, renowned for their quality and reliability, but also refrigerators, freezers and small equipment supplied by Bruyerre. Training at Carpigiani in Bologna allowed him to refine his use of the machines, develop new recipes by working with different ingredients (such as dextrose or glucose), experiment with various milks and dare to create original creations: vegetable sorbets, infusions, new textures.

The Labotronic HE-H is a high-performance ice cream maker designed to deliver optimal ice cream quality every time. With Hard-O-Dynamic® Adaptive technology, it automatically recognizes the amount and type of mix and dynamically adjusts the temperature to ensure the perfect texture, whether it's gelato, sorbet, or ice cream.

Versatile, it offers numerous programs (Gelato Excellent, Speed, Hard, Crystal, Granita Siciliana, etc.) adapted to all types of production, with fast and precise cycles. Its intuitive LCD screen allows you to monitor the consistency of the mixture in real time and adjust the parameters as needed.

This model offers an hourly production capacity of between 35 and 152 liters of ice, it adapts perfectly to the needs of artisans as well as more intensive productions.

Finally, it guarantees maximum hygiene and safety with a gap-free design, a cold maintenance system and TEOREMA connectivity allowing remote diagnosis and assistance.

MUSSANA PONY 2L

This machine, with a generous 2-litre capacity, can produce up to 90 litres of whipped cream per hour, guaranteeing an abundance of delights to satisfy even the most demanding gourmets.

This dispenser stands out for its advanced technology, ensuring constant refrigeration from the bowl to the dispensing spout. This allows you to create and serve whipped cream in optimal conditions, offering incomparable freshness to every serving.

PASTOMASTER CARPIGIANI 120 HE

Carpigiani's Pastomaster HE is a high-performance pasteurization machine designed to ensure impeccable hygiene and an ideal texture for ice cream, yogurt, and cheese bases. Thanks to its monolithic exchanger pump, it ensures ultra-fine micronization of fat globules (2 to 5 microns), for creamier and more consistent ice cream, even made from raw milk.

Versatile, it offers up to 9 basic programs for ice cream and yogurt bases, as well as dedicated cycles for sauces, pastry specialties and cheeses. Its high and low pasteurization functions (from 65 to 95 °C) allow perfect control of textures and aromas, while respecting the organoleptic qualities of the ingredients.

This model offers a tank capacity between 30 and 120 liters, it offers great production flexibility, ideal for meeting the varying requirements of craftsmen as well as more productive workshops.

Designed for user comfort, it features an ergonomic design, a temperature-controlled faucet, simplified cleaning (stainless steel shower, removable tube, Scotch-Brite surfaces), and practical options such as the Water Filling function for precise water dosing.
